Aztec Indians traditionally gave pulque, the fermented sap of assorted agave plants, to priests, heroes and sacrificial victims. In 1519, Cortes's soldiers began to distil pulque, and produced mezcal, after the native word for the agave, metl. In the nineteenth century the town of Tequila became associated with a high quality mescal made from agave tequilana. This became known as Tequila, and today has its own appellation.
