Wassail Bowl/Punch

There arc numerous old English and Welsh Wassail recipes in circulation, most are served hot and they commonly use cored, mashed, baked apples, beaten eggs, various spices, madeira, brandy and cider. The following is a basic version with which to experiment.

Ingredients

Servings: 7

  • 3.5 litres ale or dark beer
  • 125 g (4 oz sugar)
  • 20 cl sweet sherry
  • 1 teaspoon of ground nutmeg
  • 1 teaspoon of ground ginger
  • 7 hot cored baked apples

Instructions

Heat all but apples gently in large saucepan until sugar dissolves. Place apples in individual Wassail bowls and add the hot mix. Serve with dessert spoons.
