Queen's Park Swizzle

A one-time speciality of the Queen's Park Hotel, Trinidad.

Ingredients

  • 2 measures of dark rum (preferably Trinidad, Demerara)
  • 2 dashes of Angostura
  • 1/2 measure of sugar syrup
  • juice of 1/2 a lime
  • 4 mint leaves
  • 2 measures of soda water

Instructions

Squeeze lime, add juice and shell to glass. Fill with crushed ice and mint leaves. Add rum, Angostura and syrup then swizzle until glass frosts. Add the soda and straws.

Garnish: fresh sprig of mint.
