Pina Colada
The name means 'strained pineapple'. To do justice to this world-wide favourite, see coconut cream in Cocktail Making Techniques. In parts of the Caribbean this cocktail may be served in a hollowed-out pineapple and be made from freshly blended pineapple and coconut meat; no cream is used. However, that can be a little grainy in texture, so barkeepers across the world prefer to make a Pina Colada as follows: Ratios:
Ingredients
- 3 parts: 2 measures of white rum
- 2 parts: 1 1/3 measures of coconut cream
- 4 parts: 2 2/3 measure of pineapple juice
- 1 teaspoon of whipping cream
- 1/2 measure of caster sugar
Instructions
Add ingredients to shaker and swirl until sugar is dissolved. Test for sweetness. Shake briefly with a glassful of crushed ice.
Garnish: slice of pineapple and a cherry, add straws.

- Chi Chi or Vodka Pina Colada: Add vodka is place of rum.
