Klondike

This is tricky but tasty. It should have two distinct layers of colour - red on blue/green.

Ingredients

• 1 1/3 measures of silver tequila
• 3/4 measure of cognac
• 1 measure of lime juice
• 1 measure of mandarin juice
• 1/3 measure of almond syrup
• 1/2 measure of Blue Curacao

Instructions

Add all but the Blue Curacao to glass. Fill with just sufficient crushed ice to make into a sherbet/sorbet. The Blue Curacao should now be added a little at a time with a barspoon until the drink turns light blue/green. It should not be bright blue. The glass should now be about two-thirds full. To a mixing glass or shaker add: 3/4 measure of dark rum and 1/2 measure of Grenadine. Make into a sherbet as before. If not bright red add a little more Grenadine. Now add the red sherbet on top of the blue.

Garnish: fruit in season, add straws.
