Tom and Jerry

Created by Jerry Thomas around 1852 at the Planters' House Bar, St. Louis, USA. He refused to serve it until winter's first snowfall.

Ingredients

Servings: 10

Stage 1

  • 2 measures of dark rum
  • 6 eggs
  • 6 tablespoons sugar (originally twice this quantity) 1/2 teaspoon of ground cinnamon
  • 1/8 teaspoon of ground cloves
  • 1/8 teaspoon of ground allspice
  • 1/4 teaspoon of baking soda

Stage 2

 

  • 1 measure of batter
  • 1 measure of brandy
  • 4 measures of boiling milk (originally water)
  • Sprinkle with grated nutmeg.

Instructions

Whisk stage 1 ingredients thoroughly to produce a batter, then add the stage 2 ingredients to each glass.

Alcohol Content: 1.2 units
