Tom and Jerry
Created by Jerry Thomas around 1852 at the Planters' House Bar, St. Louis, USA. He refused to serve it until winter's first snowfall.
Ingredients
Servings: 10
Stage 1
- 2 measures of dark rum
- 6 eggs
- 6 tablespoons sugar (originally twice this quantity) 1/2 teaspoon of ground cinnamon
- 1/8 teaspoon of ground cloves
- 1/8 teaspoon of ground allspice
- 1/4 teaspoon of baking soda
Stage 2
- 1 measure of batter
- 1 measure of brandy
- 4 measures of boiling milk (originally water)
- Sprinkle with grated nutmeg.
Instructions
Whisk stage 1 ingredients thoroughly to produce a batter, then add the stage 2 ingredients to each glass.
