French 75

The original '75 Cocktail' was created by Henry of Henry's Bar, Paris, during the First World War. He named it after the famous French '75' light field gun. In the post-war celebrations, Harry of Harry's Bar, Paris, added champagne to what was originally a short drink with a gin base and dash of lemon, and named it a French 75. By 1930 it was world famous and has recently become a class of drink in its own right.

Ingredients

  • 5 measures of champagne
  • 1 measure of gin
  • 1 measure of lemon juice
  • 1 heaped teaspoon of caster sugar

Instructions

Add all but champagne to glass, ensure the sugar dissolves. Fill glass with ice and add the champagne.

Garnish: half slice lemon and a cherry, add straws. Replace the gin in the following popular Frenches: French 95: 1 measure of bourbon. French 125:1 measure of cognac
