Pousse-Café
French for 'push the coffee'.
A style of after dinner drink made by layering a minimum of 3 ingredients to form distinct layers in the glass. The ingredients must be added carefully in order of density (heaviest first), by holding a barspoon in the glass and allowing each ingredient to trickle slowly over the back of the spoon. A straight-sided glass should be used, preferably a tall, narrow pousse-café glass.
